Dukkah Coated Pork with Roasted Apple

The macadamia nuts, lemon myrtle and native mint in the Lake Tyrell Salt Company Dukkah add a truly Australian touch to this simple but flavour-filled Middle Eastern inspired dish.


  • Pork loin
  • Lake Tyrell Salt Company Dukkah*
  • Olive oil
  • Apples (we used apples from our backyard tree that were quite sweet but choose a variety best suited to your palate)
  • Carrots
  • Parsnips
  • Salt
  • Pepper
  • Cunliffe and Waters Caroline‚Äôs Onion Jam*
  • Apple cider vinegar

Peel and cut apples, carrots and parsnips before covering olive oil and seasoning with salt and pepper. Place in a roasting dish and cook in the oven for 35 to 40 minutes at 200 degrees.

Meanwhile, coat the loin of pork in olive oil and then roll in the Lake Tyrell Dukkah before pan frying on a medium heat until well-seared. Place in the oven until the pork is cooked through to your liking.

Mix the Cunliffe and Waters Onion Jam with a tablespoon of apple cider vinegar and then serve alongside the pork, apples and vegetables. Season with some extra Dukkah. Serve with a glass of Barwon Ridge chardonnay*.
